As this sumptuously hearty meal takes an afternoon to cook, you can enjoy it after a bracing winter walk. Or you can salivate indoors as the aromas fill the house.
 
Osobuco is one of several recipes listed here and devised by the chef Pato who works miracles in the kitchen of this fine Estancia in the Sierras Chicas, where the Pampas meets the Andean foothills. To be fair he does have the advantage of working with some of the world’s finest meat. You are welcomed to Los Potreros as friends and if you ride, you’re in for a real treat with the gaucho guides.
